Apple Butter

I have been so lax in my canning.
I am the type of girl who does the small batch canning.
I grow a garden each year, and this year is no exception.
This apple butter is not from my garden. I have no apple trees.
That does not mean I can't make this.
It doesn't mean you can't make this too.
Today's modern technology allows us to have apples year-round.
That is why this recipe is so great.
Most apples are harvested in the fall.
You don't have to wait to make and enjoy this in the fall.
Although I do make this both in the spring and fall.
I like to wrap them in pretty little packages and give them away as Christmas presents.
My friends seem to enjoy these more than any store-bought gift they've ever gotten.
The best part is that this is in the crock pot and can cook while you do other things,
other not-so-fun things, like laundry or dishes.
The best part is that it will make your house smell so good!

Apple Butter
4 lbs apples
Golden Delicious, Granny Smith, Macintosh
use an assortment of apples
(about 18 peeled and cored and chopped)
4 cups sugar
2 tablespoons apple pie spice
(add more to taste)
1 cup apple juice
1 bottle of apple sauce
(about 16 oz)
Directions
Combine all the ingredients and add to a slow cooker. Cook on high for 6 hours. Take off the lid and allow to cook another two hours.
Ladle hot butter into hot jars, leaving about 1/2 inch of headspace. Remove air bubbles. Process 10 minutes in a water bath.
I know this is a no-brainer, but any jars that don't seal should be kept in the refrigerator.

Peace be with you,
Veronica
