Pimento Cheese



They call this Pimento Cheese for a reason. I see a lot of people who use a lot of mayo and not a lot of Pimento and Cheese and I think that is a shame. Also, make sure you grate the cheese. Please don't buy the already grated. The texture is not the same. Here is my recipe with plenty of cheese and Pimento, but with just a bit of mayo. I love to use this on crackers, but it is equally good between two pieces of bread.


                                                            Ingredients

16 oz grated extra-sharp Cheddar cheese
  • 8 oz grated Monterey Jack cheese

  • 8 ounces cream cheese, softened

  • ½ cup mayonnaise

  • 2 tablespoon Worcestershire sauce

  • 1 (4-ounce) jar diced pimento, drained

  • 1 can roasted red peppers drained and chopped

  • ¼  cup Vidalia onion grated

  • salt and black pepper to taste

  • Place the Cheddar cheese, cream cheese, Worcestershire sauce, mayonnaise, pimento, peppers and grated onion in a large bowl.  Mix until thoroughly combined.  Season to taste with salt and black pepper.
