Blueberry Breakfast Bars

 



These Breakfast bars came out of necessity. A few years back, I was canning some blueberry jam, and it didn't set up the way that I wanted it to. So I went back to the drawing board and used the jam as a filling for these delicious bars.  

Ingredients
1 cup sugar
1 ½ cups all-purpose flour
½ tsp baking soda
½ tsp cinnamon
1 ½ cups quick oats
¾ cup cold unsalted butter, cubed
1/2 tsp salt
3 cups fresh or frozen blueberries
2 Tablespoons cornstarch
3 Tablespoons lemon juice
¾ cup sugar

Directions
Preheat oven to 375. Grease a 9x13-inch baking pan.
Combine sugar, flour, oats, butter, salt, baking soda, and cinnamon in a food processor and process until crumbly. Reserve 2 cups for topping. Press the remaining crumb mixture into the pan. Set aside. Put blueberries, cornstarch, lemon juice, and sugar into a small saucepan and bring to a boil for 2-3 minutes until thick. It will look like blueberry jam. Spread over the crust. Put on reserved topping and bake 25-30 minutes or until golden. Cool completely and enjoy!
