Barbecue Meatloaf
I sure do love a good meatloaf. It is so comforting. I also love it the next day, snuggled between two pieces of bread.
There is something so nostalgic about meatloaf for me. I feel that it is one of those recipes you either love or hate. I am in the love it camp. Well mostly. It can't be dry or flavorless; it must be moist and delicious and full of flavor. Life is too short to eat dry meatloaf.
Meatloaf
1 tablespoon olive oil
1 medium Vidalia onion
3 tablespoons barbecue sauce
2 teaspoons kosher salt
1 teaspoon ground black pepper
meatloaf mix
1/2 cup bread crumbs
2 large eggs
1/2 cup ketchup
1/4 cup brown sugar
Directions
Preheat oven to 325 degrees.
Heat the olive oil in a medium saute pan.
Add the onions and cook, stirring occasionally, until they are soft, about 5 minutes. Remove from heat.
Add the barbecue sauce and allow it to cool slightly.
In a large bowl, combine the salt, pepper, meatloaf mix, bread crumbs, and eggs. Mix to combine. Place into a grease 9 inch loaf pan.
In a small bowl, combine the ketchup and brown sugar. Spread the topping over the top of the meatloaf evenly. Bake for 45 minutes to 1 hour. The internal temperature should read 160.
Note: A pan of water placed under the meatloaf makes it moist and delicious
