Onion Jam
This beautifully caramelized onion jam goes with almost anything. I love to put it on toast, on top of meatloaf, in a charcuterie board; the possibilities are endless. You can make this and store it in the fridge, or make a big batch and can them to keep for later or give as gifts later on in the year.
- Ingredients:
- 1/4 cup vegetable oil
- 1/2 cup sugar
- 4 sweet onions chopped
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup apple cider vinegar
- Directions:
- To a large skillet, combine the oil, sugar, and onions. Cook 5-6 minutes on medium heat until sugar begins to carmelize. Add salt and pepper, and continue to cook another 20 minutes or until browned. Add vinegar and cook for another 30 minutes. Add to jars and place in refrigerator for up to 2 weeks, or place in a water bath canner for 15 minutes.
