Cucumber, Tomatoes and Onion Salad
If you grow a garden in the summer, you usually make this salad. Sometimes you use the Italian dressing you get at the store, or you can make it with pantry staples, as I did. I like to use apple cider vinegar because that is what I usually use when I am canning. It is a great way to enjoy the bounty of the summer.
Ingredients
2 tomatoes
2 cucumbers
1 medium Vidalia
1/2 cup water
1/2 cup vinegar
1/2 white sugar
salt and pepper to taste
Directions
Peel and slice cucumbers, and chop tomatoes and onion. Combine all in a large bowl. Mix up the dressing by combining vinegar, water, sugar, salt, and pepper. Try to make sure the sugar is dissolved. Pour the vinegar dressing over the vegetables and refrigerate for a few hours or overnight.
You can make it low-carb by substituting the sugar for a sugar substitute like Splenda.
