Banana Ice Cream

Have you ever wanted something creamy and sweet but not want to derail any of your food diet plans? I love this recipe because it is very creamy for what it in it. The bananas are what gives it that oh so creamy texture without adding a lot of fat or calories to the mix.  I love the banana flavor and thought next time I may not add vanilla but perhaps some coconut extract. I think it would give it some tropical flavor. We could also add some topping but that would add to the calorie content but leaving it just like this is how I like it when I just want a little something sweet that wont derail my diet.

Ingredients
2 cups 2 % milk
1/2 can evaporated milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 medium bananas mashed

Directions
In a medium bowl combine the 2%, evaporated milks, sugar and vanilla. Pour into ice cream maker and freeze according to manufacturers instructions. When the ice cream is just about frozen add banana just to combined.
Transfer to a freezer container and freeze overnight before serving.
Peace be with you,
Veronica
